Chicken Inasal
CHICKEN INASAL
Ingredients
2 stalks tanglad, julienne
1 tbsp minced garlic
salt and pepper to taste
10 pcs calamansi, extract juice
1 whole chicken, split into two
1/4 cup achuete seeds (soaked in 2 tbsp water, remove seed and add some oil)
Procedure
Marinate chicken in mixture of calamansi juice, salt, pepper, garlic, and tanglad preferably overnight. Remove from marinade. Barbecue chicken on a pit over charcoal until half-done. Meanwhile, mix marinade and achuete oil. Brush chicken with this mixture until "inasal" is done.
