Lemon Chicken Lollies
LEMON CHICKEN LOLLIES
Makes 8 servings
Ingredients
1/2 kilo chicken drumsticks
2 pc egg
4 tsp vinegar
1 tsp salt
1/2 tsp pepper
1/2 cup cornstarch
1 cup oil
Lemon Glaze:
5 tbsp lemon juice
1 tsp ginger, finely chopped
2 tsp lemon peel, cut into thin slices
6 tbsp water
1/2 cup sugar
4 tsp cornstarch
Procedure
Mix the egg, vinegar, salt, pepper and cornstarch with the chicken lollipops. Set aside to marinate for at least 10 minutes.
Deep fry chicken in pre-heated oil until golden brown.
To make the sauce: Combine all the ingredients in a small saucepan. Let simmer on low heat until slightly thickened and sauce clears up. Dip chicken lollipops in the sauce. Serve immediately.
