Relyenong Bangus
Ingredients:
2 medium-size bangus (aprrox. 500 grams each)
1/2 k. fish fillets (preferrably lapu-lapu or tanguinge)
1 cup cooking oil
1 tbsp. minced garlic
3 onions
300 g. tomatoes
1/2 c. atsuete color
1/2 k. frozen peas
1/4 c. flour
4 eggs
2 boxes raisins (small)
1 banana leaf
1/4 c. melted butter
sat and pepper
1 stalk leeks
1 tbsp.peppercon
Procedure:
Carefully remove all meat and bones from bangus.( most fish vendors can do this for you expertly)
Debone bangus meat and add the additional fish fillets and noil with leeks and peppercon.
Heat oil,and saute garlic,oinions and tomatoes. Add fish mea,raisins and sweet peas.
Braise for 3 minutes then add atsuete,flour and eggs.
Season with salt and pepper.
Stuff the filling in bangus skin and stich to close.
Put in a tray with banana leaves and melted butter.Oven bake at 250 degree until skin browns.
