Roasted Crispy Chicken


1200 g whole chicken
20 g salt
5 g chicken powder
10 g sugar (refined)
1 g five-spiced powder
50 ml vinegar
20 g glucose


clean the chicken and wipe with chicken powder, iodized salt and
five-spiced powder.
After 15 minutes, wash chicken and blanch it in boiling water,
Wipe the chicken with vinegar and glucose solution and let the chicken hang for two hours
to dry the skin. Deep fry until well done. Serve
